The testimony of a single witness can not convict someone. This idea is simply practical and logical, it does however have it's own flaws. The potential for one witness to lie or at least stretch the truth for their own reasons could be high. The odds of two or three diminish yet there are still cases of people being paid to lie. At Jesus' trial the priests tried to find two witnesses against him but the people that were coached did not agree enough to be credible so He could not be convicted by their testimony.
