It wasn't that uncommon in war to cut off the head of ones chief foes, especially a king or military leader. It was a trophy and symbol of great victory, just as David cut off the head of Goliath, it showed that the head of the enemy was defeated. The Philistines then took Saul's and his son's bodies and put them on display, there was at least a faithful remnant to come and reclaim them for a proper burial. Further insult was placing Saul's armor, the symbol of his strength in the temple of their pagan goddess. Interesting to note that Saul's armor really was the symbol of his strength, it should have been God.
